What On Earth Do I Do With These Radishes?!
Vegetables are coming in strong, happy, and healthy! As of today we have lots of lettuce, spinach, and radishes. Which then prompted my next thought, "What on Earth do I do with these radishes?"
After searching through the internet and putting a few things together myself I came up with a really simple and delicious recipe. The best part is, I made this for our Father's Day Brunch and everyone loved it!
First, I sliced up my radishes and cucumbers.
In a separate bowl, I mixed up my plain Greek yogurt, olive oil, dill, salt, pepper, garlic, and garlic powder.
Then I mixed everything together and brought it over to Grandma's house for Father's Day Brunch!
From start to finish the whole thing took me maybe 20 minutes.
- 10-12 radishes
- 2 cucumbers
- 1/2 cup plain white Greek yogurt
- 2 tablespoons of olive oil
- 1/2 teaspoon of garlic powder
- 2 garlics, minced (or more, I say the more garlic the better)
- 1 teaspoon of dill
- salt and peper to taste
